「綠皮開心果」工坊,為淇聚一堂股份有限公司所經營之甜點與原料品牌,亦是目前台灣單一據點中,開心果醬使用量最高的專業商家之一,象徵我們長年專注於開心果風味的深度實踐。
淇聚一堂股份有限公司為台灣第一家引進「無殼綠色開心果仁」的專業進口商。品牌發展初期即從義大利出發——這個以咖啡烘焙、甜點工藝與食品加工技術聞名世界的國度,孕育出數百家開心果加工品牌,其香氣、濃度、口感、色澤與脂質表現各具風格。
為了理解開心果真正的風味潛力,我們多次深入義大利產業現場,與當地加工廠長時間交流。研究發現,義大利西西里開心果年產量約 2,800–3,200 噸,但其再加工產能卻高達 27,000–35,000 噸。這意味著,義大利開心果加工品 超過 90% 的開心果仁其實來自其他產區,其中「中亞地區」為全球最主要的供應來源。
原料優勢
油脂含量,決定香氣深度
「伊朗」是開心果樹的原生地,擁有最完整、最豐富的品種基因。高原與沙漠交錯的地形,造就極大的日夜溫差,使果實從萌芽到成熟歷經嚴苛生長環境,進而孕育出「高含油量與層次深厚、辨識度極高的開心果香氣」。
在烘焙、甜點與冰淇淋製作中,「油脂」與「天然開心果香氣」是決定風味表現的兩大關鍵核心,而這正是我們選料與製程上最重視、也最不妥協的標準。

從產地到配方,為專業而生
為確保原料品質與供應穩定性,我們深入杜拜與伊朗,與當地農業與加工夥伴合作,以「綠皮開心果」品牌引進高品質的「無殼綠色開心果仁」與其加工農產品。
不僅止於進口,我們更專注於後端製程優化。透過反覆測試與調整「烘焙曲線」與「低溫研磨參數」,開發出 「專為台灣烘焙、糕點與冰淇淋市場量身打造的 開心果醬配方」,確保穩定性、純淨度與實際應用表現。

Pistacchio-TW Workshop is a dessert and ingredient brand operated by Gelateam Corp.Taiwan.We are also recognized as the single-location business with the highest pistachio paste usage in Taiwan, reflecting our deep specialization and long-term commitment to pistachio craftsmanship.
Gelateam Corp. is the first company in Taiwan to import shelled-free green pistachio kernels for professional food applications. Our journey began with Italy—globally renowned for its coffee roasting culture, pastry craftsmanship, and advanced food processing expertise. Italy is home to hundreds of pistachio-processing brands, each expressing different profiles of aroma, intensity, texture, color, and lipid composition.To understand pistachio at its highest potential, we conducted multiple on-site visits across Italy, engaging directly with local producers and processors.
Through these exchanges, we gained a crucial insight while Sicily produces approximately 2,800–3,200 tons of pistachios annually, Italy’s pistachio reprocessing capacity reaches 27,000–35,000 tons per year.This reveals a global reality—over 90% of pistachio kernels used in Italy originate from other regions, with the Middle East as the primary source.
Iran is the native homeland of the pistachio tree, offering unmatched genetic diversity and flavor complexity. Its unique plateau–desert climate, with extreme day–night temperature variations, forces pistachio trees to endure intense growing conditions from bud formation to full maturity. This environment produces pistachios with exceptionally high oil content and a deep, unmistakable pistachio aroma—qualities that remain incomparable to other regions.
In baking, dessert making, and ice cream making, the aroma of oils and natural pistachios are two key elements that determine the flavor profile, and these are the standards we value most and are least willing to compromise on in our ingredient selection and production processes.
To secure the finest raw materials, we work directly with partners in Dubai and Iran, introducing premium shelled-free green pistachio kernels and processed pistachio products under the Green Pistachio brand.
Beyond sourcing, we focus on refinement.
By adjusting roasting curves and low-temperature grinding parameters, we develop OEM pistachio paste formulations specifically designed for Taiwan’s baking, pastry, and gelato industries—ensuring consistency, purity, and optimal performance in professional kitchens.
